Lentil Cookies

Yes I said lentil. When I first talked about these in my lotro kin (yes I’ll admit to being a geek), I got reactions of disbelief that a cookie with lentils could taste anything but bad. In all honesty, if you gave me these cookies and a plain chocolate chip, I would go for the lentil cookies any day. You really don’t taste the lentils, they just pack a protein punch and the sunflower, pumpkin, and flax seeds add a fantastic healthy nutrition to a butter and sugar cookie. The original recipe from Bal Arneson calls for whole wheat flour, but to make these a gluten free treat for a few of my friends (Denise) I changed it to add chick pea flour instead.

Note – For a tiny minority of GSE, inflammatory responses may extend to cover oats, so be careful. If you can’t have oats, then remove these from the recipe and add slivered almonds or something else to bulk up the cookie dough.

I’ve tried the recipe with regular flour and chickpea flour, the fabulous taste is there. Just watch with chickpea flour the cookie may become a bit flatter. It was the one notice I found with my trial runs. Also do not make the mistake I did, one cup of cooked lentils does not equal one cup of uncooked lentils. I made that mistake and had (aww pour me) to make two batches of these cookies. I noticed that if the lentils are cooled the dough after you mix the lentils in, will not look like the below photo, but don’t fret everything will turn out fine.

Plum Island

I find the beach relaxing. If I could live there 24/7 I probably would, heck if I could live on a sailboat 24/7 and make a living I would. I have a water spirit through and through (who wouldn’t be if you live on the west coast of Canada). So one of the things I had to do while I was on the east coast was actually touch the Atlantic Ocean. I know something so small, but I’ve been on the furthest point on the west and east of the Atlantic Ocean, but I’ve never actually touched it. Then as I was there on Plum Island I realized within 6 months of each other I’ve seen the Pacific AND the Atlantic oceans, seen each side of the US. How cool is that?

Plum Island is documented as early as 1616 as an unnamed island on the map of Captain John Smith, in which he names New England. Today it’s a popular tourist destination holding B&B’s and hotels, but some local residents call this place home.

Beaches up here tend to be rocky, slimy with kelp and smells like the ocean. Nothing compared to this sandy dune ridden beach. The smell of the sea? Nowhere. But I still enjoyed it none the less, even spent 10 minutes just starting out to sea.
