The Daring Kitchen – Food Preservation

The September 2010 Daring Cooks’ challenge was hosted by of Eat4Fun. John chose to challenge The Daring Cooks to learn about food preservation, mainly in the form of canning and freezing. He challenged everyone to make a recipe and preserve it. John’s source for food preservation information was from The National Center for Home Food Preservation.

And hence all the canning that my followers on Twitter heard about in the last week. I try hard not to tell people what I had to make for The Daring Kitchen Challenges, but since I have gotten a little .. erm .. itsy bitsy crazy with this challenge and disappeared, I had to mention what I had been doing, but at least I didn’t mention the why.

Since I have already accomplished food preservation in the form of freezing before and canning, wow ten years ago, I decided to give it a try again with one of the recommended recipes – apple butter. Since I don’t have an emulsion blender or a strainer my apple butter became more of an apple sauce, chunky instead of smooth, but non the less still tasty. If I had the forethought to realize how addicted I would be, I probably would have spent money on an actual canner, but I didn’t. When K asked me, ‘Are you going to go overboard with this?’ I innocently replied ‘no’ but I was wrong. So three pots down (I may actually have to throw one away, I wasn’t paying attention and burnt a preserve caked on the the bottom,) K helping me create a ‘bamboo mat’, Neala as supervisor, while Flynn lounged around, I proudly accomplished this challenge with fifteen different kinds of canned goods.

    How come you didn’t list the Ginger Pear Compote? Really enjoyed that on my oatmeal.
    Congrats on a job well done. I think you should treat yourself to a real canner, lol. If you have no room to store the jars, bring them here. You may never see them again though, lol. Well maybe when they are empty. So does that mean canning pickles is off your “bucket list”?
