Daring Cooks Challenge – Risotto

The 2010 March Daring Cooks challenge was hosted by Eleanor of MelbournefoodGeek and Jess of Jessthebaker. They chose to challenge Daring Cooks to make risotto. The various components of their challenge recipe are based on input from the Australian Masterchef cookbook and the cookbook Moorish by Greg Malouf.

At college, when my roommates were making Kraft Dinner I would be making risotto. Yes, I was trying to show off. Also trying to prove a point to my summer male roommates that one in a dorm could cook a fine meal without resorting to box food and milk out of the container. (My summer female roommates knew how to cook.) Normally when I cook risotto, I usually resort to mushroom, but I wanted to try something different.

Nice and creamy butternut squash risotto was just the key, with a nice sharp piece of parmesan cheese mixed through in.

  1. OMG you sure can take great food photographs they are superb and deserve to be in a cookbook. I really like the series of cooking the risotto rice but the first one is so pretty and so delicious looking excellent work on this challenge and yes I know all about student cooking from boxes and tins.
